Orange Bourbon
This coffee belongs to the Orange Bourbon variety, part of the Bourbon coffee family. Orange Bourbon is a mutation of Red Bourbon, where the cherries ripen to a bright orange color, from which the variety takes its name.
Las Quebraditas Farm
This coffee comes from the Quebraditas farm in Colombia. The farm is located in the village of Santa Rosa, in the municipality of Oporapa in the Huila region. It covers 18 hectares & has 3,500 trees. The main harvest is from November to January and the altitude ranges between 1,600 and 1,850 meters above sea level. Oporapa has an equatorial climate. It is usually hot, humid and rainy all year round
Harvest:
Coffee cherries are harvested exclusively by hand, this ensures that over 80% of the cherries have reached the appropriate point of ripeness
Floating:
In this “floating” stage, any unripe or overripe coffee cherries or those that have rotted from the sun are removed, again ensuring the best quality Processing The coffee undergoes a double fermentation initially for 36 hours and then for 48 hours, in a subsequent stage a yeast strain and citrus culture are added to enhance the complexity and aroma of the coffee. The cherries then undergo a 24-hour oxidation process in plastic barrels before being mashed into a dry form. After the mash, a 36-hour fermentation removes the mucilage and the coffee is washed at 45°C to cause a thermal shock
A second fermentation takes place over a period of 72 hours at temperatures below 25°C using special yeast, finishing with a cold wash at 5°C to seal the process. The beans are then mechanically dried for 48 hours at 38°C. The beans are stored in GrainPro type bags to maintain their freshness and flavor until they reach us at our Roastery in Volos.
